Washed Ethiopians have always been a favorite of ours here at Sagebrush and this one does not disappoint. It has everything that is unique to the country: complexity and boldness in a smooth cup. I noticed a floral and complex flavor, with muted fruit notes, like blueberries. As I developed the roast and drank it more, I noticed a chocolate richness with a creamy vanilla finish. All typical of an excellent Sidamo coffee. Roasting this one dark has made it shine.
Coffee Production / Farm:
Arfasa General Trading produced our Ethiopia Sidamo Arfasa. The company has a 300 ha coffee farm in the Kaffa region. They also manage eight coffee processing sites, among them, five of the washing stations are found in the Sidama zone.
Sidamo enjoys soil and climatic conditions-including altitude, rainfall, and temperature - that makes it perfect for the production of Arabica Coffee. Specialty Grade coffee from Sidamo is grown mainly in small villages (kebeles). Sidamo is well known for its production of "garden coffee". The coffee is planted at low density, ranging from 1000 to 1800 trees per hectare and is mostly fertilized with organic matter. All of the coffee produced under this system is agronomically organic – but most are not certified as such. About 95 % of the Sidamo coffee is fully washed. Fresh and clean cherries arrive at washing stations where they are pulped and allowed to ferment naturally. The fermented coffee is washed with clean running water, soaked in clean water, and then dried till it retains about 11.5 percent moisture.
